What is the best way of using leftover turkey from Christmas or Thanksgiving dinner?

    I like it best in a sandwich with mayonnaise.

    But there is a mixture I make with all the leftovers.... cut up turkey, stuffing, gravy.... mix them all together and serve on a bed of hot noodles.

    Cook up the turkey bones into a soup broth, strain out the bones, and put all the little bits of meat in there with the veggies...

    turkey sandwiches for supper or put it in the fridge and have some cold turkey with abit of salad or you could just bang it in a stew pot with loads of fresh veggies and potatos and a cassorole mix and let it cook in the Oven to make a delicious meal or make a home made soup if ya make a cassorole ya could always put left overs in containers and freeze them so you got some left over ready made frozen meals just a thought ;)

    Italian bread, mayo, thick tomato slices and turkey with a dash of salt and pepper.

    I truly eat this till the carcass is picked clean.

    Turkey in a Pastry Shell

    Puff pastry shells or individual pie shells---baked

    2-3 Tbsp. butter

    ½ c. chopped bell pepper

    ½ c. chopped celery

    2 cups cooked turkey or chicken

    2. Tbsp. flour

    1 cup chicken broth

    ½ cup toasted slivered almonds

    1 small jar pimentos, drained

    2 hard boiled eggs, chopped

    1-1½ cups sour cream

    Salt and pepper to taste

    Saute bell pepper and celery in butter until tender. Add meat and pimentos. Sprinkle flour on top of mixture and stir around for about a minute. Add broth gradually. The mixture shouldn't be too soupy, the flour should thicken it. Add the eggs and the almonds.

    The last step is to stir in the sour cream and heat gently until heated through. Serve in pastry shells or puff pastry. This recipe can be made in bulk and made ahead of time. Heat slowly adding the sour cream when ready to serve. The filling can be reheated, but the sour cream can separate so don't plan on reheating for company if you've added the sour cream. (OR, serve w/ dollop of sour cream on each individual servings)

    Classic Turkey Tetrazinni

    1½ (8-oz.) packages vermicelli (12 oz total)

    ½ cup butter

    ½ cup all-purpose flour

    4 cups milk

    ½ cup dry white wine

    2 Tbsp chicken bouillon granules

    1 tsp seasoned pepper

    2 cups freshly grated Parmesan cheese, divided

    4 cups diced cooked turkey or chicken

    1 (6 oz.) jar sliced mushrooms, drained

    3/4 cup slivered almonds

    1. Preheat oven to 350°F. Prepare pasta according to package directions.

    2. Meanwhile, melt butter in a Dutch oven over low heat; whisk in flour until smooth. Cook 1 minute, whisking constantly. Gradually whisk in milk and wine; cook over medium heat, whisking constantly, 8 to 10 minutes or until mixture is thickened and bubbly. Whisk in bouillon granules, seasoned pepper, and 1 cup Parmesan cheese.

    3. Remove from heat; stir in diced cooked meat, sliced mushrooms, and hot cooked pasta.

    4. Spoon mixture into a lightly greased 13- x 9" baking dish; sprinkle with slivered almonds and remaining 1 cup Parmesan cheese.

    5. Bake at 350°F for 35 minutes or until bubbly. Makes 8 to 10 servings

    Just substitute the turkey for chicken.

    Like turkey noodle soup, turkey salad chicken and bbq turkey sandwhich.

    Make up all leftovers into sandwiches and deliver them to the homeless in the park.

    [bonus answer: wrap them in tinfoil and observe which homeless save the tinfoil, and then hire them. The ones who throw the tinfoil away are not worth your trouble.]

    hot turkey sandwich( with stuffing, cran sauce and gravy) on toast or pot pie. i often just freeze the meat and cook the bones and connective tissue in the crock pot with salt and veggies to make super awesome stock. ive got to admit the hot turkey sandwich is my favorite.

    On sandwiches or with salad.We sometimes get a second hot meal from it if there's a lot left over.

    Sometimes I freeze some for hot turkey sandwiches. I Sometimes make Turkey casserole from the pickings or turkey ala king. I've made soup from the carcass and add a bit of the meat or make a stew with chicken broth turkey meat and veggies

    Turkey stew

    Saute celery and onions until onions are clear and put in a large pot. and add your veggies according to how long they need to cook, a bay leaf salt and pepper and a pinch of poultry seasoning. Pour the broth over the veggies.When the veggies are half cooked add cut up turkey meat. You can top with dumplings if you want.

    TURKEY FLORENTINE

    1-10 oz. bag spinach---cook and put in a casserole dish. Pour half of

    sauce on top, then layer on top

    ½ cup fresh mushrooms 3 cups cooked turkey

    Sauce

    1 can cream of mushroom soup 1 can cream of celery soup

    ¼ cup dry white wine

    Mix together and pour half on top of spinach and half after turkey is added. Sprinkle with

    1 cup grated cheddar cheese

    Bake @ 350 until cheese is hot and bubbling—20-30 minutes

    TURKEY CASSEROLE

    1 cup thinly sliced onions

    2 cups cooked diced turkey

    1 tbsp. chopped green pepper

    1 can mushroom soup

    2-3 cups cooked vegetables

    ½ cup milk

    salt and pepper

    Sweat onions and green pepper in a frying pan in a little water until tender. Add remaining ingredients. Then you can cook many ways.

    Put it in pie crust or crusts for pot pie or make individual pies

    Bake @ 425 for 20-25 minutes until pastry is done(less for individual)

    Put in a square baking dish and top with biscuits.

    Bake @ 450 for 15-20 minutes or until biscuits are done.

    Put in casserole and top with

    1-1 ½ tbsp melted butter mixed with 1 ½ cups fine bread crumbs. Stir to coat all bread crumbs and sprinkle on top of prepared casserole.

    Bake @ 350 for 20- 30 minutes or until hot and crumbs are toasted (this is our favorite)

    Turkey Ala King

    1 tbsp. butter or marg.

    1/4 cup chopped green pepper

    1 can mushroom soup

    1/2 cup milk

    1 1/2 cups cut up turkey

    Heat butter or marg. in a pan. Add green pepper and cook until tender. Add remaining ingredients and heat thoroughly . Serve over rice or on toasted bread.
