How hot should it be in your smoker when cooking a pork shoulder?

    I'd say 200 -220 degrees until your pork hits at least 160, some people might say 180 to break down the collagens. The slower, the better; if you have the time.

    My target temperature for smoking pork shoulder is 215. Throughout the smoking process, my smoker probably runs from between 205 - 225. As long as you keep the temp roughly in that rang , you're good to go.

    i cook mine between 225 - 275 slow is best
