There is no way of calculating – there are too many variables – suspension compression for example will absorb some transmitted energy, so will the type of bike, the position of the rider and the axis and length of the lever that launches the rider.

Depends on the trajectory. But is simple calculus. Your dead body would be flung in a parabola shaped path. You also didn't specify if that was all in the air or if sliding down the pavement counts.
