No doctor has said there is anything wrong with me, sent me to a specialist or offered an explanation. I have no past issues or diseases either.

Nope, there's nothing wrong with you so don't fret!
Some people just have unique qualities, like being double jointed or having an extra finger and your unique quality is not having a knee-jerk reflex! I think that would pretty cool and if your doctors say your fine then you have nothing to worry about!
It definitely sounds plausible considering there are people without gag reflexes.
