My dad recently moved to Cleveland, TN, which isn't far from Knoxville by my understanding, and he loves it. Lots of things you can do, and if you're a nature person definitely check out the Smokey Mountains. Great place for hiking, camping, etc.
I've visited him there a few times. It's a nice environment, kind people, and seems like an all around nice place to live, and as far as I can tell they're like any of the other warmer states, no snow (I live in MN right now, so I think the winters there are T-Shirt weather :P). If you're into knives like I am (a bit weird to mention in an answer like this :/) they have a HUGE knife display at smkw (smokey mountain knife works). I have a lot of fun going there. Not much bad things to say about it from the couple of months I've spent there.
My dad works for Johnson Controls as a project manager, if I remember the job title correctly lol. I haven't heard any bad things about the economy there, and everyone that I know that's lived there thinks it's a great place to live. Not too sure about what jobs are available, but one can probably figure that part out online and by reading a newspaper I suppose. Good luck if you decide to move! Hope this helps!

West Knoxville is the best section of town with North Knoxville/Fountain City being second. Chapman Hwy and downtown leave something to be desired.
As a meat cutter, you might be able to get a job at one of the upscale grocery stores like Fresh Market. But there's several new stores either being built now or soon to be built - Publix, Costco, Whole Foods and Trader Joe's. And most of them will be in west Knoxville!
One thing - while there is a transit bus service, I'm not sure how far it goes or the routes.
It's best to have your own mode of transportation and a good city map!

If i were you i might transfer when you consider that if kathy was my actual friend she would aid me and she or he would not ditch me. Also i know how rough it's to depart your best friend behind however good day you need to. You will make new pals on the new tuition however preserve in touch together with your old acquaintances by calling them or emailing each and every different. Even be friendly and exceptional to others and that approach you will make new friends. Just right luck and have a excellent summer time!!!!

I understand that Publix Supermarkets are planning to expand into the Knoxville market, so you would definitely have job openings there.
