The Undertaker’s undefeated Wrestlemania Streak had by far more value than any other accomplishments in all of Pro Wrestling. The Streak by far is the most prestigious accomplishment currently in WWE, and quite possibly the most prestigious of all time.
By ending The Undertaker’s Wrestlemania Streak, that wrestler would become WWE’s all time greatest Legend in an instant (in kayfabe manner) and his legacy will live forever. That would be the biggest, crowning achievement of any wrestler. That means more than winning 100 World Titles. As you can see, Shawn Michaels even agreed to put his 25 year career on the line in order to get the second opportunity to break The Streak. He never did for World Titles.
The Undertaker’s Wrestlemania Streak is so Legendary. Many Legendary figures had fallen to The Undertaker and failed to break the Streak: Jimmy Snuka, Jake Roberts Ric Flair, Edge, Shawn Michaels, Triple H, etc. Giants such as King Kong Bundy , Kane, Mark Henry, Big Show, and Giant Gonzales also failed. So did Batista and Randy Orton, the modern day biggest stars. They all have failed to do that. So if anyone could break The Undertaker’s Streak, he will be soon be the greatest kayfabe wrestler of all time.
Beating The Undertaker at Wrestlemania is an impossible feat. No one has successfully do that, not even the Legends who had experience and strength like Shawn Michaels and Triple H, and both failed twice and three times. You have seen how much punishments The Undertaker can endure and only to come back and still manage to extend his Streak at Wrestlemania every year. No one had the ability to kick out and come back and endure punishment as much as The Undertaker can. The Undertaker can adapt to every situations very will and successfully pull out victories. That’s why beating him at Wrestlemania is an extremely impossible task.
So, the wrestler who beat The Undertaker will at Wrestlemania will be better than anyone who had fallen to that Streak and that wrestler will become Immortal. This will be the same case with when Hulk Hogan ending Andre The Giant’s 15 year undefeated streak in Pro Wrestling. So will the wrestler who beat The Undertaker. That’s why everyone target The Undertaker to end his Streak.

Two reasons, I think.
1. Ending the Streak would be the biggest accomplishment any wrestler could achieve. So they're tossing big names out there to hype the Streak even more.
2. Ending the Streak would make anybody's career. That one victory would pretty much make the guy who did it an instant legend. It would be like winning a gunfight against Doc Holliday. Just about every wrestler would love to be the one to end the Streak.
Not Del Rio, he's not a big enough star and doesn't have enough credibility to be a legitimate threat to the Streak. Barrett isn't a big enough star, either, but he does have more credibility than Del Rio, and ending the Streak would put Barrett right at the top. He's a likely candidate for an article of that type.
Cena should be the most talked-about and should have already had an article like that. Cena's the only big name Taker hasn't beaten. And Taker is the only big name Cena hasn't beaten.
Kane is another. He's beaten Taker before but never at Wrestlemania. Kane has been trying to prove he's the better of the two since his debut. Ending the Streak would be the way to prove that he IS better than his "brother".
But the WWE does like to stir up controversy. Wouldn't surprise me at all to see wwe.com do an article about Ziggler believing he can end the Streak just because he's a braggart. Damian Sandow, as well, as a way to "wipe the scourge of evil" out of the WWE.

I don't really know if they're hyping people to go up against The Streak per say, they're more just hyping the stars themselves. And really, they did it with Sheamus and Brock Lesnar, two guys who are right at the top of the WWE mountain. Sheamus is the World Heavyweight Champion and Lesnar just destroyed Triple H and proclaimed himself the "conqueror of the WWE Universe". If we're talking kayfabe here, then those are two guys, along with John Cena and The Rock, who should absolutely be considered for The Streak.
I actually liked those articles, especially the Lesnar one (although the idea of him becoming General Manager was pretty silly. Becoming World Champion, defeating Cena, The Rock and The Undertaker. Those all make sense. GM? Uh...). Sheamus talking about guys he'd like to face was pretty cool too (even if he has already faced most of them...). Remember, he IS the World Champion, so it makes sense for him to want to face guys like CM Punk and The Undertaker. I'd LOVE to see Sheamus/Lesnar.

I guess they want to prize the streak even more, and this is a good way to do it. I liked the entire Sheamus slideshow, he could put interesting matches with Lesnar, Punk, Barrett, Orton and especially Undertaker. This time around, if let us say he does go for the streak, it is someone fresh and new to go against the streak.
Sorry I didn't answer your real question, but I like the foreshadowing going on around these articles.
