Is it grammatically correct to say "hop off the bus" or "hop off of the bus"?

Both expressions are highly informal and therefore stylistically problematic. If this is for something you need to turn in to your teacher, just say "The bus pulled up to the school and I got out."

Both are acceptable, however, if you can avoid having two prepositions together, you should. So the first is better.
