How would I rearrange this sentence to make it a proper sentence?
If you were to just walk into Guitar Center for the first time it would be quite overwhelming to see all the guitars lining the wall.

This appears to be a proper sentence, as long as you add a comma after "the first time," but if you absolutely need to rearrange the sentence, it would be, "It would be quite overwhelming to see all the guitars lining the wall if you were to just walk into Guitar Center for the first time."

The first time you walk into Guitar Center and see all of the guitars lining the wall, you will be overwhelmed.

Walking into a Guitar Centre for the first time, I was nicely suprised by all the differant Guitars lining the walls.
