Goose smells bad, still good?
A friend gave me an extra goose he shot this morning. It sat undressed for about 4-5 hours at about 45 degree weather. I have never dressed a goose before, but noticed when I opened the ice chest, it had a fairly unpleasant odor to it. Removing the organs, it smelled more. I did not check well enough to see if the gall was intact... does goose usually have a stronger odor? Is it safe to eat?

Yes geese smell. And you really have to like goose to eat it. After you clean it you'll need to wash it down very well, then soak it in ice water at least a day. This gets a good portion of the blood left in carcass, out, helping with the gamey taste. If your going to cook it whole, brine it, it will help with the flavor. Gse are naturally tough so cook it low and slow. Good luck.

4-5 hours in 45 degree weather is nothing. It is like in a fridge. The intestines might have splattered all over, but it is not a very big deal. If it's in good condition, hang it 2-4 days and even longer if you have dedicated place for it (designed for it). All meat should be hanged for most pleasant eating.
