what can i add to some carrots to make a tasty but healthy soup?

    Onions

    Swede

    Leek

    Potato

    Some stock

    SAlt and pepper

    Whatever you have to hand really - I sometimes sling a handful of pasta in mine - just a bit of carbs.

    All kinds of things. But chopped onion sounds good. Garlic if you like it. Celery if you have it. It needs protein so you can use crumbled sausage or swish up eggs and stir them in. Do the eggs at the end if you use them, kind of like egg drop soup. Carrots are sweet so if you have something bitter or spicy to balance it out, that would work. But now you need some starch to make it filling. Crumbled up ramen noodles or broken spaghetti. Macaroni. Rice. Diced potatoes. Barley. Lentils. Split peas. Whatever's on hand.

    Soup is something you put on the back burner and let simmer from a few hours to a day. It doesn't need a recipe but it helps to keep a record of what you put in so if you like it you can do it again. Starting with a meat stock is a plus because then you don't need more meat to make it savory. If I roast a chicken, all the waste goes in and cooks for hours. Skin, gristle, and I crack the bones with pliers. Then I strain good, rich broth out. Dad likes fish so he goes to the store to buy the bones they cut the fillets from. I used to start a day ahead and cook up smoked ham hocks but I'm not supposed to have that much salt any more. So the dog next door gets cheated out of the bones I used to give her.

    Healthy is a matter of opinion. Soup is usually loaded with salt and that's not healthy. But if you want to do it fast, get onion soup mix and dump it in after cooking your diced or grated carrots for a while.

    Chopped potatos, onion, celery, corn and some chicken or beef boulion. You can add chicken or cubed beef if you want but I find the boulion tasty enough.

    l make soup using carrots and butternut squash with some vegetable or chicken stock, lots of black pepper, a pinch of sugar and a good sprinkling of ground cumin or five spice powder.

  • Vegetable stock, celery, onions, garlic, potatoes-white and sweet, peas, corn, corriander, mustard powder, tumeric, allspice, and salt. You could also add some fresh parsley and cilantro(what comes from corriander seed), for some color.
