A county jail is where people are taken upon arrest and during trial. You can also be in a county jail if you are serving a term 365 days (1 year) or less. If you are convicted and sentenced to more than one year, you will be sent to state prison. You can be released from jail early but not from prison.

Jails tend to be run by the county and are intended for short term incarceration, usually 6 months or less. Or, to hold someone up to and during their trial. That could be over a year. Prisons are long term and are higher security than jails. Prisons also have exercise yards, workshops, metal shops etc where the inmates can learn some sort of trade. They also used to make license plates. Prisons can also have gardens where they grow their own vegetables. But the major difference is time.

Jail is the first stop holds everything from dui to murder. If it's a more serious crime and you get sentenced to anything more than a year you go to prison.
