Can someone give me cooking tips? I have high cholesterol.?

I have high cholesterol and I'm not a great cook but can someone please give me a simple meal to prepare for myself before I starve...lol

    Cut back on red meats and add more fish and chicken to your diet. Eat more fresh vegetables, including salads and fresh fruit.

    One Serving Baked Salmon Fillet

    You will need honey, dijon or brown mustard, some dried dill weed and a 6-8 oz piece of salmon fillet.

    Make some extra to add to a salad tomorrow. Preheat Oven to 375 degrees. Mix 2 teaspoons dijon or brown mustard with 1 teaspoon honey and a pinch of dried dill weed. Spray an oven proof baking dish with Pam, place fillet in dish, spread mustard honey mixture over salmon and bake in preheated oven for 20 minutes. For a one dish meal, add some diced tomatoes and marinated artichokes to the baking dish.

    For the next days salad, top salad greens with sliced avocado and mango, some thinly sliced onion and the leftover salmon, preferably at room temp. Dress with a store bought Lite raspberry vinaigrette. I like Ken's Light Options Pecan or Walnut Lite Raspberry Dressing.

    Edit: The raspberry salad dressing contains .5g Sat Fat and 0 grams trans fats per serving.

    This is another one of my favorite recipes. Use bone-in chicken breasts and remove skin before baking. Serve with a salad or brown rice or whole grain pasta.

    CHICKEN WITH ARTICHOKES, TOMATOES, PEPPERS & MUSHROOMS

    Serves 4-6

    3 1/2-4 pound chicken legs and thighs or breasts

    1 6 oz jar marinated artichoke hearts (halved and drained)

    1 medium onion (cut into chunks - to match the artichokes)

    1 pound white button mushrooms (halved or quartered)

    1 or 2 small bell peppers, any color, seeded and cut in strips or pieces

    2 tablespoons Dijon or brown mustard

    3-6 cloves garlic, peeled

    1/4 cup olive oil or low sodium chicken broth

    1/4 cup red wine vinegar

    1/4 cup red wine

    1/4 teaspoon dried basil

    1/4 teaspoon dried thyme

    1/4 teaspoon dried tarragon or oregano

    1 bay leaf

    salt and pepper (to taste)

    Place chicken, bone side down, in a baking pan. Distribute onion, artichoke and mushrooms over the top. Combine olive oil, mustard, red wine, red wine vinegar, garlic, dried spices, salt and pepper and pour over the chicken.

    Bake at 350º for 1 1/2 hours, basting every 1/2 hour.

    We have been given some shocking advice on what "high cholesterol" means and what to do about it.

    Two important things - cholesterol is absolutely essential for most of your cells and hormone production in your body - and most of the cholesterol in the body is created by your liver and not from your diet.

    We need cholesterol for arterial wall repair. It's the huge amount of carbs that we eat that inflames the arterial walls that cholesterol is repairing. We need LDL to repair the arteries and HDL to take away the spent LDL.

    The problem is that we often don't have enough HDL to take away the LDL and it's the LDL left hanging on our arteries that is heart disease.

    Note that it's the carbs that cause the heart disease. The LDL are like firemen at a fire. They didn't light it - they're there to put it out!

    You need to cut down on carbs and eat foods containing cholesterol!

    I know it sounds counter-intuitive, but think of how we're now told eggs have "good" cholesterol. You need to eat "good" cholesterol!

    Steamed fish is one of my favorites to cook,

    I use any fish with firm white meat

    Slices of ginger

    Low sodium soy sauce

    Slices of garlic and a little bit of olive oil

    Lemon

    I put all the ingredients onto a piece of grease proof paper on foil then wrap it loosely and bake in the oven depending on the size of the fish or fillets if I want a faster cook at 230 degrees Celsius for a minimum of 5 minutes checking every 3 minutes to see if the fish is cooked

    Adding too much liquid to your slow-cooker will shorten the cooking time and will normally turn your ingrediants into soup. So be aware that you have added the kraut juice and the natural meat juices with the combined onion that too will produce it's own juice., ...Potatos are always a good thing in a crockpot, but they may not cook evenly when just placed on top of the rest of you meal. Potatos would be best on the bottom. You might put about 2 teaspoons of cornstarch whipped with two onces of water into your pot,...this will help to produce a nice sauce in the end result....     Go fish. Twice a week, substitute a fatty fish, such as salmon or tuna, for a higher-fat meat like beef. These fish are rich in omega-3s, a type of polyunsaturated fat, which may help lower your blood cholesterol level when substituted for saturated and trans fats in your diet.

    Use herbs, vinegar, tomatoes, onions and/or fat-free or low-fat sauces or salad dressings for better health, especially if you have high blood pressure or high cholesterol.
