My girlfriend (now ex) is marrying her ex and I'm thinking its because she wanted to get married now but realized that I wasn't ready for that commitment. Would a woman marry someone else because she believes that the relationship with the man she truly loves might be hopeless? Would she settle for someone else for that reason?

Yes, its very possible. People "settle" in life for a variety of reasons.
