Anybody can follow a recipe, the challenge lies in creating your own and unique cooking style and recipes. I suggest you cook your favorite food with no recipe. It can be anything: cinnamon rolls, chili verde, cheesecake, a souffle, spaghetti sauce.
Good luck and have fun!

How about a mushroom pea risotto under pan seared scallops. You can find this in any fine dining restaurant and it is easy to screw up risotto,,,, and especially easy to make a beautiful scallop rubbery and inedible. Risotto is also one of those things that most people do at a medium heat but real chefs can master at high it. It requires toasting and constant attention.

Kringla or kolaches. I made them years ago but now it's a dismal failure, seriously, there must be something about it. Also, a good prime rib, and a cheese soufflé.

Some that I've made that were challenging:
Opera Cake
Seven Sins cake http://www.sprinklebakes.com/2012/05/seven-sins-ch...
coq au vin http://www.foodnetwork.com/recipes/alton-brown/coq...
beef wellington http://www.foodnetwork.com/recipes/tyler-florence/...
...and anything involving meringues is always a nightmare for me >_>
