My mom is so cocky and mean?

My mom has a very cocky personality. She thinks she's good with words and people, she knows how people work, the big picture is she is very very cocky and she thinks she knows everything.
The only thing she isn't cocky about is how she looks, she is a little chubby and when I told her that she's very cocky, she said 'I know I am.' (Proudly) and then said 'My personality is the only thing I have so I have to flaunt it.' (And she DOES.) there's never ever winning an argument with her, you will never ever win. She will make sure you don't win. She will yell at me for everything and pick a fight about the littlest things and give me half an hour lectures. 
What do I do? I just hate how cocky people can be, and it annoys me. And when she knows she's wrong about something, she won't say sorry or say you're right, she'll try and point out something you said which was wrong or say 'You know what? You're so thick sometimes! It's so hard to deal with you!' Then storm out of the room and eventually I'll be the one to go and apologize even if I did nothing wrong (btw I have never in my life heard her apologize to anyone). 
Also lately she's been forgetting things, for example she'll give me a bucket of clothes to fold and I'll fold them then she'll give me another bucket the next day and then say 'You haven't folded the clothes in 2 days! You're so lazy, you think I don't notice?!' And when I try to explain to her that she gave me a bucket yesterday and today, she won't believe me.
What do I do?

Laugh--- She's a mom. She isn't perfect, she isn't superman. She is human. Being happy with her extra pudge, or her personality is a great thing. It could be worse, she could be sad and depressed all the time. 

Moms usually know best , even if they don't know everything. She is trying. She loves you and she worries all the time about everything.

You should really sit down and talk to her about how the things she says (or doesn't say)makes you sad or hurt. 

To start the conversation you say;
"Mom when I HEAR you yell at me, it makes ME feel upset, hurt and a disappointment." Give her a chance to reply, keep calm, then say "What I want to see happen is for us to talk more about things that are bothering us so we can become closer"  That should get you to atleast talking. The key to talking to her is to not point blame, always make it about how it makes you feel.

Your mom has so much pride in her and she needs to acknowledge what she did wrong. She can't always bring out other peoples' flaws but not hers. Talk to your mom and tell her how you feel and try to help her to improve by saying sorry for the things she's done wrong. Maybe she grew up with parents that are like that, that doesn't like to apologize which probably infulenced her.

I think it's wrong for her to pick on her kid but you have to understand she has a lot on her plate. 
She's cocky because she is trying to make her self feel better and she is chubby so in her mind being cocky makes up for that. 
She probably so forgetful because there's a lot on her mind and she is overwhelmed

I have a similiar problem w/my mother but trust and believe me she's your mother and she loves you and ten years from now you'll realise that.
I reckon because you two maybe have a strong personality that's why you people seem to argue?
