How do I not have my paragraphs deleted when answering questions?

You must be on the new format.

From what I understand, the spacing & paragraphs are only stripped, when answering or editing. They *will* still appear, after you submit your answer ~and then~ refresh the page.

I've never had that issue here. They will delete extra spaces, so if I put four spaces after this word, it will drop three of them. (Which it did.)

But paragraphs should work just fine. Try clearing your cache files or try a different browser.
