For baked goods, I prefer to use dates (if you place dates in a food processor, and grind until they stick together, you'll get date paste). You can use as a one to one substitution for sugar in mostly bready desserts like brownies, cake, muffins, pancakes, waffles, oatmeal. Might not work so well in meringue, or light cakes like angel food. Cookies might be a bit doughier. Also works well in baked beans, frostings, and puddings. It's like brown sugar mixed with a little liquid and thickener. It's easiest to use an electric mixer to incorporate the mess into the liquid portion of the recipe.

For plain old sweetening, I think stevia is the best. It works well in drinks, marinades, and perhaps pie fillings. You can also use stevia in dates.

Why these. Well, neither are a refined sugar, dates are a fruit, and they maybe the most naturally sweet of all the fruits. Stevia is expensive, but you only need to use a small amount

The best sugar substitute is no sugar. I've just simply given it up.

I'm not convinced that this new stevia stuff won't turn out to have something wrong with it.

LOL....sugar doesn't contribute to diabetes. Genetics and overindulgence do. We are designed to ingest and digest sugar. What do you think we get in an IV in we need intravenous fluids? GLUCOSE!! We eat WAY too much sugar for sure, but the sugar itself is NOT the problem.
