Perhaps more pointed, would be the observation that in the pursuit of science, having seen the "things that seem like the product of design" of the universe (as per Dawkins), and all its parts, still the atheist scientist excludes from their reasoning anything that smacks of the metaphysical.
It might be compared to the patron of a restaurant, and suggesting after having eaten what he ordered,
---that the paper and ink the menu presented, had organized itself ideally to produce the meal.
He excludes the idea of
---an author that wrote the menu,
---an owner that built the restaurant,
---and the agent of the author/owner who assembled the meal.
This same patron then defends his observance with vehemence and jeers to all who might consider such things as "an owner/author with a design to feed people from His restaurant," as viable.
How can we allow such singularity of thought and prejudice of reason define our world view?

Yes, it SEEMS like there must be some design. I GUESS that there is / was.
You GUESS too. That's all any of us can do. All our armchair arguing with each other is nonsense. None of us can do anything more than conjecture.

Science is a disciplined process designed to eliminate opinion and make actual fact the deciding factor.
Your methodology would depend completely on opinion and make facts irrelevant. It would have no more validity than a cable TV show on Bigfoot.
EDIT: I think your analogy needs work. A menu and food are actual and measurable. Once you move to an invisible menu, things change. Or do you have a copy of a menu to share with us?

Because in the real world science is very different from what you claim. It is described quite satisfactorily in any competent school.

It may vary with how asker means that. Focus on one or more variables is Good; PROvided that one allows for other variables.
