How many carbs is too much?
The setup: I'm 31, about 75lbs overweight (used to be in great shape 10 years ago).
I do not exercise (used to a lot, when I played college sports)
I tend to eat a lot at night (very much so a binge eater)
My diet is so so otherwise, (i am actually a good cook).
The Plan: I have started to exercise, very slowly working on the elliptical for 20 -30 mins. It may not seem like much but compared to absolutly nothing it's a lot for me...already feel a difference. I'm working on my diet and really want to avoid things I cannot sustain like carb free. I'm capable of cooking anything at home. I love Pasta and Pizza. We only eat pasta once a week and pizza once a week. I've decided to eat eggs and lean homemade pork sausage for breakfast, salad with chicken or some other protein at lunch, then a normal dinner of a protein, veggie, and either potatoe/rice/pasta. My question is to dinner really. What changes should I make to make these meals a little better carb wise. Is whole wheat dough/pasta a good alternative? I don't want to eat pasta everyday thinking that "well it's whole wheat so i'm good". How much is too much? Is cutting it out of breakfast and lunch going to help me (currently have cereal for breakfast and sandwich for lunch). I was thinking of having pasta as a meal once a week, and homemade whole wheat pizza once a week. Let me know your opinion.

There is no set amount of too much carbs but it's a non-essential macronutrient. In your whole diet, you need reach proteins and fats minimal requirement... (respectively 0.6g and 0.35g per pound of body weight every day) and the rest of the calories can be carbs if you want...
Caloric intake vs outtake will determines your weight.
