We don't, it is written that only a few will find the right path. There are so many people who will take advantage of God's word and use it for their own selfish desires. There are fake Christians everywhere, whether protestant or Catholic. They make those of us who are true in God look as if we are foolish.
But I do assure you that we protestants are true to God and Jesus who saves us from our sins. May we all see the light and accept Christ as our Savior! I know where I'm going, I'm a protestant and I believe God will keep his eternal promise! And I certainly do not pick and choose. Nor does any True Believer.

Because it's an extension of sola scriptura which entails personal interpretation of the bible . Why shouldn't protestants take the next logical step and start decided which doctrines are important to them and which aren't.
This is why when I was seriously thinking of becoming an evangelical that I went back to my Catholic Faith.
The bible was never meant to be interpreted personally as you've seen the results of that false teaching: 60,000 different denominations and if you don't like what your church teaches you can jump ship to another church or better yet start a new denomination of your own and viola a new Christian denomination all carte

People are kind of forced to. The Bible contradicts itself on so many issues. Christians have to choose a verse to believe in the bible. Typically, if they choose one of them, then there is another verse that contradicts it somewhere in the bible.
Here's a pretty good list of the contradictions in the Bible, 480 contradictions:
http://skepticsannotatedbible.com/contra/by_name.h...
There are even more than 480, as I've found a few that aren't on that list as well.
So yeah, it's not possible to believe everything in the Bible because then you would have conflicting beliefs.

Because the branch wants social control, but there are some parts of the culture that people aren't willing to give up to accept the religion, so we get cherry-picking.

Protestants in my experience preach and teach the whole Bible in the light of Christ's new covenant.

It's more complicated than that:
http://www.bible-reviews.com/charts_timeline_wbc.h...
Protestants - just like Roman Catholics, Eastern Orthodox, Oriental Orthodox, etc. ad nauseum - chose which documents to include in their Bibles. I mean
a - **someone** has to make the decision
b - naturally, each Christian sect is going to make that decision for itself...at least to some extent. I mean: some sects are going to adopt an existing document set, of course - but even that is a decision that each sect has to make for itself.

We don't. Well, some particular denominations do, but not nondenominational Christians (like me) and not Lutheran Missouri synod (how I was raised). Many others also believe in the entire bible, only a select few such as Lutheran ELCA don't believe in all of it.

Actually, WE DON'T!!! It's a myth created by CRITICS of Christianity that wish to throw darts at us.
Hate evil, love good, And establish justice in the gate! (Amos 5:15)
MARANATHA! Come, Lord Jesus, COME!

Anyone who says people do not pick and choose clearly have not looked at their fellow Christians.
