It's from concentrating too much. Try going back on the easier level until your better at guitar hero, and then move up to the more difficult level when you are a bit more ready. Take more frequent breaks from the game and see if that helps.

It is most likely stress, although it could be a symptom of something much worse. If it persists I would see a doctor.
