How long will it take to be able to drink my jailhouse wine?

I added yeast to the juice and racked it after 2 weeks I added more sugar to it to make it sweeter. The cork flew out of the bottle. I plugged her back up about a week ago. Is it ready?

  • Adding sugar to an active ferment will not make it taste sweeter, the sugar will be almost completely consumed by the yeast. You either need to kill the yeast with chemicals or pasteurization or remove the yeast via filtration, and then add sugar or add some kind of artificial sweetener. To answer your question, just wait till it clears up a bit. Leave it at a stable temperature area, in the dark preferably. 4 weeks is probably plenty of time, 4 weeks after the final sugar addition.

    it would be best to wait 30 - 35 days after you racked it.
