My friend gave me 5 pounds of sweet potatoes and I would love to make sweet potato casserole.?

    Honestly, they aren't called sweet potatoes for no reason. If you've never tried them without all the sugar that people put on them you'd be surprised at how sweet they are just on their own. They're delicious really!

    You can boil or bake them to get them cooked first - 25-50 min depending on the size. They're done when a fork slides into the meat of the potato easily. If baking it may be a little hard to get thru the skin but after that it should go in easy.

    Once they're cooked, peel and slice them about 1/4-1/2 inch thick. Lay the slices out in a baking dish and sprinkle with a little (not to much!) cinnamon and nutmeg. Gently stir or sort of fold this over on top of itself to distribute the spices thruout. Sprinkle with some chopped pecans and dot with 1-2 Tbls of butter depending on how big the dish is. Cover and bake 20 min at 325*.

    You could throw on some marshmallows and return to the oven long enough to brown them if you want. My husband and I don't like marshmallows so I don't do that part. Try them without added sugar and I think you might be surprised at how good they are. I sure was.

    But I am severely hypoglycemic and cannot have any processed white or brown sugar, or molasses. I tried stevia, but I had an allergic reaction to it. I have no idea how to make the casserole since brown sugar, Splenda brown sugar blend and stevia all are out. What can I use as a substitute for brown sugar?

    There are a ton of recipes on the Internet for sweet potato casseroles. Choose one that appeals to you and make it.

    cut in rounds about 1.5 inches thick sprinkle with some nutmeg, and cinnamon and drizzle with maple syrup and bake for 45 min- 1hr at 350 until tender

    what about corn syrup or REAL maple syrup (not Aunt Jemima, the stuff that's like $8 a pint)

    agave syrup? or just leave out the sweetener altogether--the sweet potatoes are already pretty sweet...

    easy u peel them and them cook in oven till baked smash them and them add stuff like marshmallows nuts. i like to put carmel and cook it the rest of the way in oven heated to 350
