I would pick an dress you like.
Here the thing, if it's cold you can add an sweater or something to keep you warm.
You can not take heavy clothes off, but you can always add to an outfit due to weather.
You are not outside a lot.
You will be in door with heat and a lot of people, it get hot.
You could wear winter coat and the dress you want with something to put on if you are cold.

Personally I would dress for the weather, you don't want to be too under dressed and be freezing, if it gets too hot you don't want to be too covered up.
Safest thing to do is wear an outfit that you can layer or add a sweater to if you do get chilly.

Keep in mind that while you are not a member of the wedding party, you will be in pictures and need to dress formally. A duiponi silk suit or dress would be appropriate, and you will be whisked into the church and reception quickly. Dress for indoors - it's not going to be 80 in December, so you don't have to worry about being too hot, and it's not hard to cover a formal outfit with a coat, and change your shoes in the vestibule.

Dress for the venue. Is the wedding and reception outside? Then you need to be dressed to be comfortable outside for hours.
Inside wedding and reception? Then dress for how formal the wedding and venue is.
December in Texas you can still wear dark green or velvet of you want to if the wedding is inside.

I would suggest dressing for the weather otherwise you'll be miserable. It's as apt to be hot and steamy as icy, depending on the day.

Dress for the weather! In Texas, you never know what the weather is going to be like, from one day to the next. It might be snowing one day, and approaching 85 degrees two days later.
As a general rule, the outside temperature during the day in December is going to be somewhere in the 70's and drop to around 45 degrees at night.
Bring along a sweater, in case we hit one of our "chilly" days of about 55 to 65 (or in case the weather decides to turn icy). Check the long-range weather forecast for the part of the state you will be going to, online at the Weather Channel. Good luck!
