    Polenta can be used as a base for the same toppings you would put on pizza but it will not make a good pizza crust.

    There is no gluten in corn and it is gluten that provides the structure for a dough crust.

    You can put dry corn meal on a pizza stone or in the bottom of a pan to hep prevent the pizza crust from sticking it also adds a bit of crunch to the pizza crust.
