Why do christians still make memes and share things that show white jesus?
Once they realized it was an inaccurate depiction, why didn't they start making memes and sharing things that have a better depiction?

Because no one knows what Jesus truly looked like. What we do know is that He is the Lord over every race, every skin tone.

we are all made in the image and likeness of God so He looks like each one of us

"And He was transfigured before them; and His face shone like the sun, and His garments became as white as light." (Matthew 17:2).
Because that is what Jesus REALLY looks like. The 'shining' includes all of His traits, which includes all ethnicity, genders, and social classes, (Galatians 3:28). But its predominant feature is in being 'white as (sun)light.'
This isn't a reference to a Caucasoid skin color but it also isn't irrelevant or somehow a 'wrong' depiction.

Everybody does their own thing. In Africa there are lots of depictions of black jesus. I suppose there must be Asian and Native American depictions, too. The Europeans just made theirs look like them. I don't think anybody's going for historical accuracy - it never occurs to them.
Although, it might help people stay oriented to Jesus' time, place, and circumstances a little better if they WERE more interested in history. I once heard a guy say "If English was good enough for the good lord, it's good enough for me!"
