It is perfectly possible and practical, although trying to revert back to a single boot operating system can be difficult. However as windows 10 is almost universally backward compatible with windows 7, unless you are a developer with specific windows 7 needs, or you have a custom program that will only run on Windows 7, its not necesssary. You also need to purchase an additional windows licence.
If you have a specific need for windows 7, I would favour running Windows 7 as a virtual machine inside windows 10, using VMware, this is much less invasive and you can easily revert to windows 10 if you no longer need windows 7

Possible? Yes
Practical? Kinda comes down to how much storage you have available to share between the 2 OSs.
