    I know a lot of Norse Mythology, but don't know of any holy books that describes any system of worship

    Actually writing is relatively recent in human development. Religion was around for centuries (or millenniums) before there was any writing.

    Eventually any idea that people have is going to be put into written form. Religion is no exception to that.

    That is right: Religions follow books 

    which provide a basis for the religion itself.

    Some religions didn't get old enough to be followed by religious books.

    They got terminated in their infancy due to the rules in the holy books of more established religions.

    True, so to speak. The doctrine is found in the holy books respective to the religion. You have to note, however, when individual religions spread (namely Christianity and Islam), their corresponding holy books were not compiled yet.
