I made a big pot of soup today, and we had leftover white and dark meat, stuffing and gravy, and I made a fresh batch of mashed potatoes and a huge butternut squash. Enough left for another full meal plus grilled sandwiches, and I will make soup with the leftover squash.

I made a turkey and ham pie, Then boiled the carcass to make a stock & froze it to use another day.

I did chickens instead of turkey...

Last night I made chicken salad, but used Trader Joe’s Black Truffle Alfredo sauce instead of mayo. Yum!! On toast points - delish!

My favorite thing I ever did with leftover turkey was make ravioli, I mixed finely minced turkey with ricotta, a touch of garlic in a food processor, then stirred in very finely minced pecans and dried montemarcy cherries. Served this after cooking with just a light drizzle of butter and a sprinkle of minced pecans and parsley...

We found the legs at the bottom of the freezer in the garage 8 years later. Err! We binned them. ;-)

We didn't have left overs. We had lobster instead of tyrkey.
