Do we need to complete our sacraments to get married in the catholic church?

My fiance and I have been living together for 11 years and have 2 children that we have already baptized catholic.

We are not married legally and don’t have any previous marriages of any sort.I am baptized catholic and confirmation but not my first communion. My fiance was only baptized catholic. Our local church requires us to go to classes every Monday from 7-9pm from January to the end of May to complete our sacraments and a marriage prep class all day on a Saturday. Due to our work and commute schedules we cannot attend classes to complete our sacraments. But we can attend the marriage prep class. Is it possible for us to have a marriage recognized by the church and full traditional  catholic mass without completing our sacraments?
