If I check the voltage of a 3 phase panel. How do I know it's a wye or delta coming from the transformer?

Picture a Wye transformer in your mind, the center is ground. Three phase is easy, a servo motor has at least four phases. I'll attempt to answer your question, if it works don't f'uck with it. : )

you don't, you have to look at the transformer. But a delta would not have a neutral, just 3 hot wires, whereas a Y does have a neutral plus 4 hots.
