Who wouldn't like fried chicken - oh YUM!
However, I'm too lazy to make it, so I usually flash-roast my chickens. I cut out the back bone, butterfly the bird, put something under the skin - such as lemon zest, tarragon, garlic mixed in a bit of butter. Then I put the whole thing in a backing rack and roast at 500 degrees for about 35-40 minutes.
It's not fried, but man, it's good!

I love fried chicken. I always prefer fried. But, baked is way healthier.

I love both, but frying is a pain, so I oven fry--first I melt some butter in my baking dish, and add some crushed garlic cloves and let cook until fragrant; dip the chicken (preferably thighs) in the butter to coat, then coat with a mixture of bread crumbs, wheat germ, corn meal, dried parsley, salt and pepper, and parmesan cheese, oh and some sesame seeds. Bake at 400 degrees for an hour. It's not exactly light cuisine, but it's less messy than frying, and DELICIOUS!!!! Freezes well, too.

Fried if you want something greasy,salty and full of fat,which is a good meal every now and then..or you could go for baked which is healthier and light. It's up to you really,lol. :)
