Wash asparagus thoroughly. Trim stem ends slightly. Leave spears whole or cut into 2-inch lengths. Blanch in boiling water for 1 to 2 minutes ONLY. Cool IMMEDIATELY in ice water. DRAIN WELL and pack in plastic freezer bags or containers leaving no excess air space. Seal, label and freeze at 0 degrees F. Use within eight months for best quality. Do not defrost before cooking.

Freezing Fresh Asparagus

I have a large asparagus patch that does quite well, always more than I can use in a season. I have never blanched or scalded it. I clean it very well, slice in pieces, and just freeze. It always turns out tasting like fresh. I would think that because of its delicate nature blanching would risk making it soggy. Try it both ways and then decide whats right for you. PS> you will feel so lucky come december when it becomes very expensive if you can even find it.

Can Asparagus Be Frozen

Wash thoroughly & sort into sizes. Trim stalks by removing scales with a sharp knife. Cut into even lengths to fit freezer containers. Scald small spears 1 1/2 minutes, medium spears 2 minutes & large spears 3 minutes. Cool, drain & pack in plastic freezer bags, can or freeze jars or plastic freezer boxes. Seal, label & freeze.
