I'm planning on cooking tuna steaks for the first time. I've found that most people leave the center of the steak rare, but is there any harm to the flavor or the texture if it is cooked throughout? I don't mind medium rare in a beef steak, but I don't know if I can eat it like that when it comes to fish. Any thoughts or suggestions? (if you have a recipe - feel free to share. Usually tuna steaks are eaten as rare as possible. But each person has their own preference. It took me awhile. Good luck! Marinate steaks before cooking. We like soy, fresh ginger and a little sugar. Inside: oil pan lightly with a thin oil (extra virgin olive oil) and heat the pan until hot. Pat dry steaks and drop in hot pan. Cook just until brown and turn. Serve immediately. Center should be cool. Propane: Dry steaks. Flame each side just until brown. Grill: Preheat until hot. Grill each side just until brown.
We make tuna steaks on the grill frequently. They taste better if you cook them like a regular steak. Leave as much pink in the center as you're comfortable with. We leave ours a deep pink through the center. If you cook them until they are well done, they will be dry and somewhat tough. We usually use a Teriyaki type marinade on them, which comes out quite tasty. I've also used Italian dressing on them. allrecipes.com is a good site for finding recipes. Just plug in tuna steaks and you'll get a bunch of different recipes.
