Leftover cooked Pork Roast?

Have a very nice piece, about 2 pounds, of cooked pork loin roast that I need to do something with for dinner as I really do not want it to go to waste. The only trouble is no sandwiches, other than that I am open to suggestions. thanks.

Enchiladas, pulled pork tacos and my favorite: Fried rice.
For that you will need cold cooked rice, though. It has to be cooked then completely cold when you begin to fry it or it gets mushy.
There's a great recipe on www.food.com for pork fried rice using cooked pork. Easy too. Do a search on 'pork fried rice' then hit the 'sort by' tab to show "most popular" It is the top recipe w/ 28 reviews. You can pretty much put what you want in it as far as veggies go.

Tangy Sliced Pork Sandwiches 1/4 cup butter 1/4 cup Worcestershire sauce 2 tablespoons lemon juice 2 tablespoons white sugar 1/4 teaspoon paprika 1/8 teaspoon salt 1/8 teaspoon cayenne pepper 1/2 pound boneless pork, cooked and cubed 4 hamburger buns Melt butter or margarine in a large saucepan over medium heat. Add the Worcestershire sauce, lemon juice, sugar, paprika, salt and cayenne pepper. Mix together and bring mixture to a boil, stirring often. Add the cooked pork and let simmer just until pork is heated through. Divide into 4 equal portions onto the bottom of each hamburger bun. CrockPot Chili 1 lb browned meat (i used leftover pork loin) 2 cans each kidney beans, bushes chili beans, chopped tomatos 1 can tomato sauce 1 package chili seasoning 1. Add all ingredients into crock pot 2. Turn crock pot to low 3. Play and have fun for 8-10 hours 4. serve! great with cheese, chips, and sour cream chili verde cube the pork, and sautee it in a bit of oil just to brown it. You can sweat some diced onions at the same time if you like. Then, the easy way to finish it is to open a can or two of green chile sauce, cover the pork with it, and simmer it (covered) for somewhere between 20 minutes and an hour. You can serve this on top of plain rice, which will pick up every last bit of the delicious juice, or you can wrap it in a heated flour tortilla with whatever other ingredients you use in your burrito. A little guacamole is good. Mexican Roll Ups Use one of your choice Shredded Chicken, shredded beef or shredded pork Put in skillet with 1 pkg of taco seasoning Add enough water so that you may simmer it, not to much After simmering like 20 min Place small amount in to soft burrito shell, I like to use the large ones. Roll them up and secure with toothpicks In deep fryer or skillet, brown til golden brown They will be crunchy Serve with sour cream, salsa or gucamole Dont forget to remove toothpicks !!!!

ok take the pork roast and stick it in the oven with some diced apples and white wine and let it soak up the flavors and serve it with roasted almonds and a savory sauce

Finely dice, (say quarter inch) and pan fry with onions and peppers. Fold into a soft corn or flour tortilla with a little shredded cheese, (Monterrey Jack, Colby, etc.) and maybe a shmear of refried beans and/or avocado shredded lettuce...Yum

chile verde. Use chicken stock or pork stock, green chiles, onions, stewed tomatoes and spices like cumin and chili powder to your taste. Add a little flour to thicken it and serve it as a stew with tortillas, salsa, sour cream and cheese. YUM.
