Rice has only a few hours before it starts to harden... It will still be edible the next day but you will know the rice is harder than usual..

California roll will be fine for a few days even.. There is nothing raw in it, assuming it isnt rolled in tobiko (those tiny orange roe).. But after a day, the rice will turn hard and it wont be very appetizing, i imagine.

I wouldn't even keep raw fish a day honestly. Once it gets room temperature it can start growing bacteria I think so.. yeah.
