How long to wait for a guy to get over an old relationship?

There's this guy I really like, and he likes me back. But he just got out of a two year relationship about a month ago. And his ex girlfriend was very controlling of him and it wasn't healthy for him. I know he needs time before he jumps into a new relationship, but how long should I have to wait?

give it another month or so, try to be around him as much as possible and act like a good friend to him, even show him (without anything beyond handholding) what a real girlfriend is like, act liek one

It really depends on the person. If as you say he likes you back, and he knows you like him, he'll come to you when he's ready.
