Mashed potatoes?
According to foodnetwork.com, you can make the mashed potatoes early and then reheat them before dinner. What do you do with them in the meantime? Put them in the fridge?

Absolutely, put them in the fridge once they have completely cooled. Then reheat in microwave before serving. You may want to add a little more cream or milk to the mix but not necessary. They will be hot and delicious and no1 will know they have been reheated if you heat them thoroughly. Consider the mashed potatoes you get in restaraunts. They aren't prepared fresh for every order. Too time consuming. They are premade and reheated before arriving at your table.

It all depends on how early you're making them. If you're going to erve them within an hour or 2, you can leave them on the counter and reheat (just throw them in the microwave) right before you bring them to the table. Any longer and I suggest you put them in the fridge or outside if it's chilly tomorrow.

How long will you be storing them? If your simply managing time while preparing other dishes then cover them and set them aside. Place them in the microwave or oevn if tehy are not being used. If you completely cool them down in the fridge they will get thick and dry. You will need to reconstitute them with some milk

I think putting them in the fridge, and then reheating any kind of potatoe taste nasty.

If they have dairy (and they should), in the fridge covered tightly. If they dry out add a little liquid, butter, milk, buttermilk, etc, as they reheat.

I've done it before and they were great. Just put it in the fridge till you're ready to serve them and then heat them.

Don't put them in the fridge. If you have to make it early and you have a second oven, puit them in the oven on warm.

depending on how early you make them if it's only an hour or so put a lid on them and leave on stove otherwise put in fridge
