    Royal icing:

    1 pound powdered sugar

5 tablespoons meringue powder or 1/4 cup pasteurized egg whites

    2 tablespoons water

    food coloring (optional)

Combine powdered sugar and meringue powder or egg whites in a mixing bowl and beat on low speed. Add water drop by drop. The amount depends on whether you used the powder or the egg whites, and on the temperature and humidity in your kitchen. Add the water slowly and do not let the mixture get runny - you will probably not use all of it. Beat until the mixture holds a trail on the surface for five seconds when you raise the mixer from the bowl. If you like, you can tint the icing with a few drops of food coloring. Makes 6 cups.

Just made 12 dozen cookies myself and the frosting I used is simple, no eggs involved, and hardens without being too "candy like"

    4 cups confectioner's sugar

    1/2 cup shortening

    1 teaspoon vanilla extract

    5 tablespoons milk

Cream together the sugar and shortening. Using an electric mixer add the vanilla and milk a little at a time. If needed add a few extra drops of milk to make the frosting the desired consistency.

This frosting was easy for my kids to frost with and hardened up in about an hour. It tastes super sweet while its still soft, but when it hardens up its not as sweet.

    Good luck to you!

    1 cup icing sugar

water (as much/little as you want to get it the consistency you're after)

I tablespoon of cocoa (for chocolate icing) OR food coloring

Easy-peasey!! - and yes, it sets so you can stack them :) Start off with 2 table spoons of water then add just a couple of drops at a time.

Make Royal Frosting. Go to your local craft store and get meringue powder, and I believe it is powdered sugar. It hardens really good.

Use powdered sugar as your base, adding a bit of milk, drop by drop, with a drop of flavoring and/or food coloring, until it's smooth and just spreadable. Used thinly, it will serve well.
