What is a really good stuffed mushroom recipe?

Preferably one without cream cheese involved

    By far the best stuffed mushroom recipe comes from a cookbook I have called Mr. Food. He's a local television personality and has a few cookbooks out. All his recipes stress quick and easy but still tasty. Here goes:

    Sausage Stuffed Mushrooms

    16 large mushrooms (about 1 pound)

    1/2 small onion, minced

    1/4 cup chopped red bell pepper

    1/2 pound ground Italian sausage

    2 tablespoons plain bread crumbs

    3 tablespoons grated Parmesan cheese

    1/4 teaspoon salt

    1/4 teaspoon black pepper

    Preheat the oven to 350°F.

    Remove the mushroom stems from the caps; finely chop the stems.

    In a large skillet, sauté the chopped mushroom stems, the onion, bell pepper, and sausage over medium-high heat until the sausage is crumbled and browned.

    Remove from the heat and stir in the remaining ingredients; mix well. Stuff each mushroom cap and place on a large rimmed baking sheet.

    Bake for 20 minutes, or until the mushrooms are tender.

    People RAVE over these. I also like to stuff chicken breasts with this stuffing too. Sometimes I add a little sour cream to the mix before adding to make it a little richer and creamier. I also find that the mix makes more than what fills 16 mushrooms, so have some extra on hand. Good luck!

    No cream cheese in this one and it's very tasty!

    Crab Stuffed Mushrooms

    Large, fresh mushrooms, as many as you need.

    Wash & stem the mushrooms. If you like, you can chop the stems and add them to the stuffing mix or discard them.

    Stuffing:

    6 tbs. butter

    1 med. onion, finely chopped

    1 stalk celery, finely chopped

    1 med. red or green bell pepper,

    finely chopped

    1 clove garlic, crushed

    1/2 cup white wine or water

    3 tbs. fresh lemon juice

    12 oz. crabmeat (canned, fresh, frozen, etc.--they all work)

    1/2 cup unseasoned bread crumbs

    2 tbs. fresh parsley, chopped

    1/2 tsp. dry mustard

    1 tbs. worcestershire sauce

    1 egg (slightly beaten)

    Saute onion,celery, pepper, garlic and mushroom stems if using them, in melted butter until tender. Add wine and lemon juice & heat. Remove from heat.

    Add remaining ingredients and mix well. Stuff mushroom caps generously and firmly with stuffing. Place in a shallow buttered buttered baking dish & bake at 375 for 8-10 mins--broil an additional 3 mins, if you like.

    Serve with fresh lemon wedges.

    Servings depends on size of mushrooms. This recipe makes a generous amount of any size.

    Small package Jimmy Dean bulk sausage (medium), 4 ounces cream cheese, 1 teaspoon good curry powder, fresh snipped parsley (flat leaf), fresh chiffonaded basil about 2 tablespoons and 1 tablespoon soy sauce.

    Mix these ingredients. Use large white mushrooms you have cleaned with a brush (we never wash mushrooms). Take the stems out so you form a little hollow.

    Stuff the meat into the mushrooms

    Dip mushrooms in in melted butter and roll in Japanese Panko or corn flakes crumbs set on butter Pam sprayed baking sheet.

    Bake at 375 F for about 20 mins until the meat is cooked and they are crunchy.

    These are so delicious people rave about them

    You can use portobello mushrooms cook whole and slice into individual servings after you pull from the oven or server for dinner with copped spinach on top

    This one is my favorite, and it includes cream cheese! I don't have measurements...I always just toss stuff together until it looks & tastes good. It is a fantastic blend and these always completely disappear whenever I make them! about 1/4 lb of bulk sausage, browned a handful of dried cranberries 2 or 3 green onions, sliced cream cheese mushroom caps, cleaned Mix the first four ingredients and place a scoopful into each mushroom cap. Bake at around 350° until warmed through. Enjoy!

    Take the stems neatly out of the mushrooms.... chop the stems up small and mix them with softened cream-cheese and your choice of a third ingredient (such as crumbled browned sausage, chopped olives, or little chunks of pepper-jack cheese). You will have more filling than fits back in those mushroom caps btw. The caps go in a slightly buttered pan (brownie pan works well.) Brush them with olive oil and pop them in the oven. (Looks nice if you add an olive on top or a bacon bit or something for looks / taste) Bake until soft to the the touch (basting again with olive oil if they start to look dried out at all) I usually go with about 375 for the temp - but play with what works for you.     Cajun Mushrooms

    1 onion, 1 stalk celery, 1 bell pepper, 2 cloves garlic, salt and pepper, italian bread crumbs, pamesian cheese, 2 cans crab meat...1/2 stick butter

    directions

    chop vegetable tiny and cook over medium heat until soft....stir in 3/4 bread crumbs and cheese and crab meat ,salt and pepper....

    stuff uncooked mushrooms and top with a few bread crumbs and a sprinkle of grated cheese.

    cook at 350* for 20 minutes
