When should I use my convection oven?

I just got a new range and it has a convection/conventional oven.

I've always wanted a convection oven, but I'm really a little unsure WHEN to use it? What foods? I know it's great for things like cookies, cakes, and turkeys, but what else? Suppose I'm baking a potato, for instance: Conventional or Convection? Guide me, oh wise ones....

    I use mine when I want a crust on something.

    I love to bake split chicken breasts. Spray them with butter flavor Pam and then sprinkle on McCormick Salad Supreme seasoning and some seasoning salt. Spray again and bake at 350 until it temps out at 160* with a thermometer, this is so good. The convection oven seals in the moisture.

    The instructions that came with mine said to reduce the temp. by 25* when using the convection.
