What to cook for a Mexican Christmas potluck?

My office is having a Mexican food themed Christmas potluck. Does anyone have any recipe suggestions? I have no background in Mexican food.

    Chicken Enchiladas Suiza

    Enjoy the flavors of green chiles and the texture of shredded chicken in these Enchiladas Suiza. Melted cheese and sauteed spinach and onion only add to the unique taste. And if that weren't enough, these enchiladas are a snap to make, but they taste like you've spent hours in the kitchen. "Suiza" is "Switzerland" in Spanish, named for the creamy white sauce that tops them.

    INGREDIENTS:

    12 corn tortillas

    2 cups shredded chicken

    6 oz. chopped, roasted and skinned green chiles (fresh is best, but you can use canned in a pinch)

    3 cups fresh spinach

    1/2 cup chopped onion

    1 cup crema or sour cream

    4 oz. cotija, crumbled

    5 oz. evaporated milk

    15 oz green chile sauce

    Warm oil to dip tortillas in

    PREPARATION:

    Heat oven to 350 degrees.

    Heat 1 tablespoon oil in a pan over medium heat and cook the onions for about 1 minute. Add the spinach and cook it for about 5 minutes until leaves are wilted. Fold in the chicken and green chiles.

    Set aside.

    In a saucepan, heat creama, evaporated milk, cotija and chile sauce over low heat until sauce is smooth.

    Prepare a 9x13 inch baking dish by coating the bottom with a thin layer of sauce. Dip a tortilla into the warm oil to soften it and place it into the pan. Place about 1/4 cup filling down the center of the the tortilla and sprinkle with a tablespoon of Asadero or Queso Quesadilla cheese. Roll the tortilla up and place seam side down in dish. Repeat until all tortillas are used.

    Pour remaining sauce over the top, and sprinkle with the crumbled cotija. Bake dish for 15 minutes to melt the cheese.

    Easy Taco Casserole

    2 lbs of ground meat

    one small onion

    3 cans of Ranch Style Beans

    2 cans of Campbells Cheddar Soup

    Grated Cheddar Cheese

    Tortilla Chips

    Cook the ground meat and diced onion in a skillet. When it is done mix in the Ranch style beans. In a casserole dish layer tortilla chips on the bottom. Take 1/3 of the meat mixture and put on top of the chips, spoon cheddar cheese soup over that and repeat until all the ingredients have been used. Put grated cheese on top of the casserole. Place a 350 degree oven until the cheese has melted on top. Serve with Chips and Salsa, or salad.

    This is my recipe. My family loves it. Every time we have a get together it is requested.

    maybe you can bring some stuff for tacos? or an easy dip with Doritos?

    you can put almost anything in a tortilla and call it a taco, all can be wormed in a microwave

    some things you may bring are

    flour or corn tortillas

    can fried beans

    sour cream

    prepared salsa for tacos

    chopped onions

    diced tomatoes (no can)

    Shredded Cheddar-Jack cheese

    Shredded lettuce

    guacamole

    chopped olives

    or

    you can prepare an easy dip and bring some Doritos to dip in

    Easy dip

    Mix sour cream with taco seasoning mix (you can get it in grocery stores they are very common)

    put the mix in a dip container and cover the mix with prepared salsa

    it is delicious!

    Nachos!

    Easy

    Tortilla chips, sliced jalapenos, ground beef, diced tomatoes, re fried beans (or mashed beans) top with cheese and bake a few minutes till cheese is melted. Serve on the side sour cream, picco de gallo (or salsa) and maybe avocado.

    Or Quesadillas

    For each one you need 2 flour tortilla sandwiched in diced tomatoes, meat (ground beef, chicken strips or shrimps) lots of cheese. Grill in pan (they have probably better instruction on the web) cut in pie slices. Service with sour cream or like above. For an office party you'll have to probably make 4 or so altogether

    Or Taco Salad (look up on the web)

    What about a Mexican 7-Layer Dip?

    This usually consists of layers of salsa, cream cheese, guacamole, refried beans,etc...you can find tons on recipes for this at: www.allrecipes.com

    Tortilla Casserole

    1 small package of corn tortillas

    2 cans chopped green chilies or salsa verde

    2 cups grated cheese (Monterrey, cheddar or whatever you have)

    1 cup milk

    Cooked chicken cubes, to your taste

    2 cans of cream of mushroom soup (I use one can of cream of chicken instead of cream of mushroom)

    Dilute cream of mushroom with milk. Add chicken to milk mixture.

    Layer torn up tortillas (1/2 package) on bottom of 13x9 baking dish. I can green chilies, ½ milk mixture and ½ cheese. Start layer process again.

    Bake covered @ 350 until bubbling. Approximately 30 minutes.

    Can be served topped with salsa or sour cream.

    Taco Dip:

    8oz cream cheese

    8oz sour cream

    1 package of taco seasoning

    lettuce

    cheese

    tomatos

    black oilves

    combine cream cheese & sour cream blend until creamy, add taco seasoning, blend well. spread into cake pan evenly, place lettuce, cheese, tomatos, and black olives on top. chill for 2 hours, serve woth tortilla chips

    7 Layer Dip

    9X13 pan

    from the bottom layer up:

    beans

    guacamole

    sour cream

    shredded cheddar cheese

    black olives (sliced or diced)

    diced green onions

    diced tomatoes

    Serve with tortilla chips.
