What is the best oil to use with Fondue?

I'm planning a fondue dinner and am wondering what type of oil is best in the pot. Any other tips or fondue must haves?

    Canola is best IMO. The Melting Pot restaurants use canola, too.

    Do not use sterno and try to cook w/ oil. You need a hotter, steady heat source for frying.

    Fondue is a great way to entertain, one of my faves! All the work is in the prep... you just bring out plates of food and set out and let people get w/ cooking! That said, make it easy on yourself. 2 kinds of meat and 2 veggies are plenty. You dont' have to have the variety the fondue restuarants do; it will work you to death! Parboil and quarter new potatoes so they fry quicker. Have plenty of dipping sauces, and a tempura batter for frying. Some of my fave recipes are below.

    TEMPURA BATTER

    1/3 cup ice water

    1/4 cup cornstarch

    1 egg yolk

    1/4 teaspoon salt

    1/4 teaspoon white sugar

    1 teaspoon shortening

    1/2 teaspoon baking powder

    optional: 1 Tbsp. sesame seeds (for crunch)

    In a medium bowl, mix together all ingredients. Dip food in batter then fry in oil.

    Curried Yogurt Dipping Sauce

    •1 cup plain yogurt

    •1 teaspoon fresh lemon juice

    •1 teaspoon fresh lime juice

    •3/4 teaspoon curry powder

    •1 tablespoon water

    •11/2 teaspoons garlic, chopped

    Combine yogurt, lemon juice, lime juice, curry powder, water and garlic in a food processor or blender and process until smooth. Cover and refrigerate until ready to serve. Serve with shrimp, chicken and/or vegetables.

    Bottled Sweet & Sour Sauce is good to have and so is a good bottled BBQ sauce. You can also make your own Honey-Mustard by mixing 2 part dijon, 4 parts honey, and 1 party mayo. Good for chicken.

    Definitely peanut oil and only peanut oil.

    Have several sauces available for dipping.

    I use vegetable oil. Must haves are strawberries and marshmallows
