2-3 times per day is best. You set the amount and split that up into that number of meals.
You're right about free-feeding - some do ok with it, but mine (and apparently yours) don't.
How much depends on a number of factors.
For one, inactive cats should eat approximately 18 calories per pound per day. Active cats can eat between 20-30 calories per pound per day. Note that is IDEAL weight. If your cat needs to lose a few pounds, you would multiply by the target weight.
You want to know how many calories are in the food so you can set the amount. The guidelines provided are ok, but since I'm dealing with a weight problem I like to be sure.
Canned food is better than dry; cats can typically eat more canned than dry, at least when it's a better quality canned food.
I personally feed By Nature Organics and Nature's Variety Instincts. The websites for both foods give the calories per can which is great.
Or if you go with one of the better canned foods, you can generally assume you can feed around one can per day (6oz).

Put out a bowl of dry cat food, and when it is close to empty just fill it again.
Keep the bowl in the same place and don't call her when it supper time. That way you can condition the cat to just go there when she is hungry.
Let the cat eat till she is full. She WILL stop eating.

your cat should be slowly being weined off kitten food, i have a 1 year old cat and she is quite small and i feed her 1 pouch of wet food in the morning, dry food about midday and then another pouch in the evening. if then if she is still hungry i give her a small amount of dry food. always make sure there is fresh water available everyday. another bit of advice pouches are much better value and have feeding guidelines on the boxes.

I feed my cats twice a day (I like to eat more than once) and as to how much- most cat food bags will give you recommendations on how much to feed related to size and age. If that don't work you could always ask your local veterinarian clinic.

If your cat is a constant eater, then you're right, you shouldn't use a self feeder.
Well, in opinion, you should feed her when you eat breakfast and when you eat dinner.
Alternate between dry and wet food.

once to twice a day, depending on the size of your cat, to get correct weight weigh yourself then hold cat and weigh it.
4-5 kilo cat(small-average size) 85 gram tin of soft food plus 1/2 cup dry cat food and 250mls bowl of water, 6 kilo cat and above(usually males this size) 110 gram size tin soft food 1/2 to 3/4 cup dried cat food plus 300-500mls water daily.

i just fill up the bowl when the foods nearly empty and i give my kitties mushy food from a can like dinner time and only half a can
