All of the answers of roasting is excellent. I do it every year myself by spreading them into a single layer on a baking pan, spritz them with butter spray and shake on some salt, and then baking for about 45 minutes in the oven until lightly brown.
If you're also a gardener type and have room in your yard, you can save a couple seeds to plant next spring. It's definitely a fun experience to grow your own pumpkins.

I love to roast them after soaking them in a waterbath with salt, but a lot of recipes don't call for soaking them. Here are a few links:

Once you've tried a batch, you might want to try adding different spices.

Get rid of the fibrous "guts" of the pumpkin; spread the seeds on a flat baking sheet, coat them lightly with oil (spray-on cooking oil works nicely) and toast them (about 325F until light brown). They make a very good snack - good in trail mix, too :-)

First, wash them thoroughly to get the meat off them. Then let them dry on either a paper towel or a paper plate. Once they're fully dry, you can either salt and eat them, or place them in an envelope and plant them like you would regular seeds in the spring.

I agree with the first two answers, but my "trick" to making them an awesome "treat" is to also add a few dashes of Worcestershire sauce to the butter and salt before roasting. MMMM...MMMMM
