You're looking at about $140-160 CUC in tips for the week ($1 or 2 CUC per meal, maid service, perhaps for beach towel service and once in awhile for drinks)...Each person works very hard and they appreciate anything you give. You can even choose to leave little toiletries for the maid on your pillow with a note if you like instead of money every day.
All servers and attendants appreciate those types of little gifts as well -- toiletries, pens, makeup, paper, even clothing.
If you're planning on any day trips, you're looking anywhere from $65 CAD to $200 each trip.
For buying souvenirs, they start from $1 CUC to $50 CUC (for leather).
A little extra is good to have in case you need to buy anything such as sun lotions, batteries (if you run out from your supply).
You can gauge anywhere from about $400-$800 CUC (roughly about that in CAD).
Don't carry too much cash on you. There's a charge for travellers' cheques too. Take about $400-500 CAD and use your Canadian credit card if you need extra. The last thing you need is to lose your cash.
Enjoy your trip. Don't forget to keep smiling...costs you nothing and they'll always return a smile and kindness for you :-)
PS: don't for $25 CUC airport departure tax.

A lot will depend on what you want.
Are you staying in an all inclusive in Varadero.
In this case 5-10 cuc (1 cuc peso convertible equals roughly 1 Canadian dollar) for tips.
50-100 cuc if you want to make a tourist trip.
It's an other story if you go one week to Havana. Your stay in a private room (casa particular) will cost 20 upto 40 cuc a night. Hotels are more expensive (40- 80/100 cuc).
beer ....1 Cuc
cocktail (cuba libre, mojito etc.) 2.5 - 3 cuc
a meal ..........8 - 12 cuc
taxi ....+/- 0.8 - 1 cuc / km
cover charge in a nightclub 10 up to 25 cuc
( depending on the status of the artists )
Tourist trips 50 - 200 cuc ( or more)
museum entrance 1 - 5 cuc
Baseline : it's up to you , some people will do it with 300 - 400 a week others will need 2000 cuc.

if you are a tourist going All Inclusive, my suggestion would be $20.00 per day for tips, If you go on excursions it would depend on how many you wanted to do but figure about $75.00 each. Figure $25.00 for the room housekeeper and you will need $25.00 I believe for the exit tax. My figures for tipping may be a little high but I do like to give a few pesos to the lady who looks after the public bathroom, the front desk people and also the man who looks after the sun lounges on the beach. I'm also figuring the prices as Canadian.
