My favorites are salad, (vegan) pizza, pasta with nutritional yeast cheese sauce, potatoes (scalloped, mashed, fried, baked, etc with fillings/sauces), (vegan) ice cream, scones, cake, cupcakes, cookies, vegetables (stir fried, raw, baked, fried, boiled, steamed, etc) & sandwiches (like roasted veggie, TLT, (vegan) BLT, tofurky cheezsteak, etc), sushi, tofu scramble, seitan, breads such as biscuts, naan and roti.

It depends on what kind of vegetarian you are but I love eggs with homemade salsa. It would probably still taste good with imitation eggs or something. I can't give you the exact measurements (my grandma makes it) but for the salsa you need:
vegetable oil
tomato sauce
minced garlic
green onions
jalapenos
cilantro
romano tomatoes
onions (optional)
You just chop everything up and fry it in a pan for a while. It tastes good hot or cold. I like to eat it for breakfast, lunch, or dinner. Sometimes if you have flour tortillas on hand you can make the eggs with chopped potatoes, put in the tortilla and top it off with the salsa. Sorry I couldn't provide the ingredients, but enjoy!

I love veg@n pizza and a nice stir fry but I loved this recipe
tofu sloppy joes
Ingredients:
2 tbsp olive oil
1 small onion, minced
1 pound firm or extra firm tofu, pressed
4 tbsp ketchup
2 tbsp bbq sauce
2 tbsp water
1 tsp chili powder
a dash of cayenne (optional)
salt and pepper to taste
bread or hamburger buns
Preparation:
In a small bowl, mash the tofu with a fork until it has a crumbly consistency.
Sautee the onion in the oil until done, about 3-5 minutes. Add tofu and sautee another 8-10 minutes, until tofu is cooked, stirring frequently. Reduce the heat to medium low.
Add ketchup, water, chili powder and salt and pepper and stir well. Allow sloppy joes to cook another 5-7 minutes, until ingredients are well mixed and hot

Fajitas with tons of different filling options. Start with a warm tortilla. As a base, grill some veggie strips (bell peppers, onions, carrots and zucchini cut into matchsticks, etc.). Add your favorite kind of beans (whole or refried) and maybe some rice. You can add cheese and sour cream if you eat dairy products. You can add sliced avocado or guacamole, and diced tomatoes or salsa. You can also add shredded lettuce or another green for some nice crunch. I sometimes also add sauteed mushrooms and sliced olives (whatever kind you like - I like green). You can put some cilantro and chopped green onion on top if you like. There are tons of possibilities.

I am not vegetarian myself, but I love butter bean and pesto soup.
A box of organic vegetable juice (I use Pacific veg broth)
2 14 oz cans of butter beans, drained
3 t spoons of pesto
1 cup of tomato paste (you can put ore if you like ur soup thivker)
Bring broth to boil. Put beans in, bring back to boil, cook for 10 mins. Ladle haLF OF THE beans into food processor and turn into thick paste. Return back to the pan and add pesto and paste, cook for another 5-7 min.

Ok, im not a vegetarian but i was at a family reunion a while back and someone brought in some sort of vegetarian pizza. I went crazy on that stuff. I have no idea what was in it or what it was made of but damn it was good!

mm I REALLY REALLY LIKE this plantain lasagna thing, it was DELICIOUS. An older lady made me some and I haven't seen her in a while so can't give you the recipe sorry. o and I really like potatoes made in all kinds of ways.

my fav dish is skinned mashed potatoes with corn, peas and asparagus along with spinach (steamed).

i don't know why i just love it.
the mashed potatoes are easy... boil them.. chop up some avocado seasoned with pepper. then mash it all together with some spinach (steamed) and soymilk.
very, very filling meal.
incredibly filling meal that is.
