what is a water bath? ( I want to make a pumpkin cheesecake)?
I got a recipe for pumpkin cheesecake in a gingersnap crust and I want to make sure my cheesecake doesn't crack up ..some people have suggested a water bath. what is a water bath and how do you do this correctly ? and what type of pans work better than others ?

where do you buy a 9 inch spring foam pan ?

You can but a springform pan at just about any dept. store. Cover the outside(bottom and a bit up the outside) of the pan with foil. Fill a roasting pan,( or any Pan about 4 inches bigger that the springform will fit into) with about 3 inches of water and bake cake according to directions you have

If I am not mistaking I think that means when you put your pan that your baking in a nother pan that has water in it. I think it would be like 1/2 way up the pan. I am not sure but I think that is it. I don't know anything about the 9 inch spring foam pan. I have never done that, but I have baked with water in a pan under it. I don't know what that is actually called. I think it is called the water bath though.

A water bath is usually a roasting tin filled with about two inches of water and you then put the tin with what you're baking in it. However I can't see that working with a springform tin as they have a loose bottom and the water would seep in.
