WHAT IS THE ICE FOR WHEN BRINING A TURKEY ?

THANKS TO ALL WHO RESPONDED TO MY PRIOR QUESTION ON BRINING A 21 LB TURKEY ..BUT WHAT IS THE ICE FOR EXACTLY ?

    To make sure the turkey stays cold, to avoid spoilage.

    Okay I looked at your question and saw what you mean.

    Of course you know the turky has to be kept cool, that is ovious. But putting the ice in the brine before the turkey so that the brine temp drops. If you put it in the brine while th ebrine is still hot you will par-cook the turkey and you don't want to do that.

    You don't want the turkey to begin decompsition--the turkey has to be kept cold or it will go bad and cause food poisoning.

    It is important to make sure that your Turkey stay cool enough so that harmful bacteria does not grow. Salmonella can make you pretty sick!
