Do you think that minced garlic in a jar tastes as good as fresh when using it in cooking?

    It worries me, what they put in these jars , when you can mince fresh garlic,for your own use, it tends to go dark,after it stands for a week or so but when you buy the premixed product it never goes dark ,so the carrier would have to be oil & salt,and probably mono sodium glutamate to enhance the flavour,i have used both fresh and a variety of other types of garlic, and my prognosis is chinese garlic,seems to be a weaker source, the russian ( reddish colour husks) are a larger and much stronger cloves ,for bite and strength, but to buy fresh local garlic is the best way to go..

    I always keep a jar in the fridge/pantry just in case I don't have any fresh on hand. I also keep some garlic powder for the same reason, but the garlic powder is only useful if there is enough liquid in the dish to rehydrate it.

    As far as garlic goes, you can't beat fresh for flavor, but sometimes I don't eat it fast enough and a whole fist would go to waste.

    I think the dried minced garlic has a stronger taste. It is also mellower.

    I like it in soups and stews. I can hardly taste fresh garlic in a soup.

    It's a matter of preferance. Also how old the *fresh* garlic is.

    No, it's not even close to me, it has a bitter wang to it. But if it was all I had on hand I would certainly use it. It would be better than none at all. Just don't add to much. Actually a little garlic powder with the jarred garlic might be better.

    No, garlic in a jar has a slightly off sour taste to me. It's not as strong as fresh either, but is convenient when I'm in a hurry.

    NO! I have tried it from time to time. There are some that are jarred with acidic preservatives that totally destroy the flavor. Some are jarred with oil, which only taste half bad. But nothing can taste as good as fresh!
